Heat olive oil in a large skillet over medium heat. Season the chicken breasts with garlic powder, paprika, salt, and pepper before adding them to the skillet. Sear each breast for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from heat and set aside.
In the same skillet where you cooked the chicken, toast the orzo pasta for about 1-2 minutes while stirring constantly to prevent burning.
Add chicken broth to the skillet with toasted orzo, bringing it to a simmer before covering it with a lid. Let it cook for approximately 8-10 minutes while stirring occasionally until the orzo is tender and has absorbed most of the broth.
Reduce heat to low after cooking the orzo and stir in heavy cream along with Boursin cheese until fully melted and creamy in texture.
Incorporate chopped spinach into the mixture and cook just until wilted—about 1-2 minutes should do it! Finally, return your seared chicken back into the skillet allowing it to warm up alongside all those delicious flavors.
Once everything is heated through and well combined, serve immediately garnished with optional grated Parmesan cheese and freshly chopped parsley if desired.
