Ingredients

  • 2 ¾ cups all-purpose flour Essential for the scone base.
  • ⅓ cup granulated sugar Adds sweetness.
  • 1 tablespoon baking powder Helps the scones rise.
  • ½ teaspoon baking soda Works alongside baking powder for a light texture.
  • ¾ teaspoon salt Enhances flavor.
  • 1 teaspoon ground cinnamon A key chai spice for warmth.
  • 1 teaspoon ground ginger Adds a spicy kick.
  • ¼ teaspoon ground nutmeg Imparts a warm, nutty flavor.
  • ¼ teaspoon ground cardamom Complements the other spices beautifully.
  • 1 medium pear Peeled, cored, and diced for moisture and fruitiness.
  • ½ cup unsalted butter Cold and cut into pieces for flakiness.
  • 1 tablespoon vanilla extract Enhances overall flavor profile.
  • 1 cup buttermilk Adds richness and tanginess.
  • 1 tablespoon heavy cream For brushing on top before baking.
  • 1 cup confectioners' sugar For the glaze after baking.
  • 1 tablespoon ground cinnamon To mix into the glaze for additional flavor.
  • 3-4 tablespoons heavy cream For thinning out the glaze.

Method

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cardamom. Whisk these dry ingredients until they are well-blended.
  3. Add the cold pieces of unsalted butter into the flour mixture. Using a pastry cutter or your fingers, incorporate the butter until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
  4. Pour in the buttermilk and vanilla extract, mixing gently until just combined. Fold in the diced pear carefully to avoid breaking it apart too much.
  5. Turn the dough out onto a floured surface and gently knead it just until it holds together; be careful not to overwork it. Pat or roll it into a circle about ¾ inch thick, then cut into wedges or use a round cutter to shape individual scones.
  6. Place the shaped scones onto your prepared baking sheet, brush with heavy cream, and bake for 18-20 minutes or until golden brown on top. While they cool slightly, prepare your glaze by whisking together confectioners' sugar, cinnamon, and enough heavy cream to reach desired consistency before drizzling over warm scones.
