Ingredients

  • 1 pound Pulled Rotisserie Chicken Use pre-cooked rotisserie chicken for convenience and flavor.
  • 14 oz Frozen Onions and Peppers A great time-saving ingredient that adds color and taste.
  • 15 oz Black Beans Rinsed and drained for added protein and fiber.
  • 1 cup Frozen Fire Roasted Corn This adds a sweet and smoky flavor profile.
  • 8 pieces Flour Protein Tortillas Select high-protein tortillas to enhance the nutritional value.
  • 2 cups Low Fat Cottage Cheese A creamy base for your sauce that keeps it light yet satisfying.
  • 4 oz Diced Green Chiles Adds a spicy kick without overwhelming the dish.
  • 1 packet Taco Seasoning Use your favorite blend for extra flavor depth.
  • 2 oz Colby Jack Cheese For melty goodness that ties all the ingredients together.
  • 1-2 Tablespoons Water Adjust as needed to achieve the desired sauce consistency.

Method

  1. Prepare the Cheese Sauce by adding all the cheese sauce ingredients except the water to a food processor or blender. Blend until creamy, adding water as necessary to reach your desired consistency, then set aside.
  2. Heat a large pan over medium heat and add the frozen onions and peppers to cook for about 4-5 minutes until thawed.
  3. Once the vegetables are softened, stir in the pulled chicken, black beans, and corn into the pan. Cook for an additional 2-3 minutes until everything is heated through.
  4. After removing the pan from heat, fold in the pre-prepared cheese sauce with the chicken mixture thoroughly.
  5. Take approximately 8 ounces of the cheesy chicken mixture and add it to each tortilla before tightly rolling them up.
  6. Heat a griddle or nonstick skillet over medium heat and grill each burrito for about 30-60 seconds per side until golden brown.
