Ingredients

  • 2 lbs chicken thighs and legs Bone-in and skin-on for best flavor.
  • 1/2 cup all-purpose flour For dredging the chicken.
  • 3 tbsp paprika Use Hungarian for a kick.
  • 1 tsp sea salt Essential for seasoning.
  • 1/2 tsp black pepper Adds depth to flavor.
  • 2 tbsp vegetable oil For browning the chicken.
  • 1 cup sweet onion, chopped Provides sweetness and aroma.
  • 1/8 tsp cayenne pepper Adds extra heat if desired.
  • 2 cups low sodium chicken stock Base of the sauce.
  • 1 cup sour cream Adds creaminess and tanginess.

Method

  1. Combine flour, 2 tbsp paprika, salt, and pepper in a bowl. Dredge each piece of chicken in this mixture, ensuring they are coated well. Save the leftover flour for later.
  2. In a large Dutch oven or skillet over medium-high heat, pour in vegetable oil. Once hot, add the dredged chicken pieces and brown them on both sides for about 3 minutes each. Remove the chicken from the pot and set aside.
  3. In the same pot, add chopped onions along with cayenne pepper and any remaining paprika. Sauté until the onions become tender and translucent, about 2 minutes.
  4. Return the browned chicken to the pot along with 2 cups of chicken stock. Bring to a boil, then reduce heat to low. Cover and let it simmer for about 45 minutes or until the chicken is fully cooked and tender.
  5. In a bowl with leftover flour, mix in 1 cup of sour cream and 1/2 cup of liquid from your skillet until smooth. Pour this mixture back into the Dutch oven and gently stir it in; simmer for an additional 5 minutes.
  6. Taste the sauce and adjust seasoning if necessary. Serve over egg noodles or rice.
