Ingredients

  • 1.5 lbs baby potatoes Halved or quartered for even cooking.
  • 1 block feta cheese Adds creaminess and flavor to the dish.
  • 1.5 cups cherry tomatoes Halved to enhance sweetness and color.
  • 3 tablespoons olive oil For roasting and flavor enhancement.
  • 2 cloves garlic Minced to infuse aromatic goodness.
  • 1 teaspoon dried oregano A classic herb that complements the other ingredients.
  • ½ teaspoon black pepper Adds a subtle heat without overpowering flavors.
  • to taste salt Go easy as feta is salty already.
  • fresh basil or parsley For garnish and fresh flavor (optional).

Method

  1. Preheat your oven to 400°F (200°C). While it heats, wash and cut the baby potatoes into halves or quarters depending on size. In a large baking dish, add the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss everything to coat well.
  2. Place the block of feta right in the center of the dish, nestled among the seasoned potatoes and tomatoes. Drizzle a little olive oil over the feta to help it soften and bake beautifully.
  3. Bake for 35–40 minutes, stirring the potatoes once halfway through for even roasting. You’ll know it’s ready when the potatoes are golden and tender, the tomatoes have burst, and the feta is soft and slightly browned.
  4. Remove the baking dish from the oven and stir the feta into the rest of the ingredients until it forms a creamy, tangy sauce that coats everything. Top with fresh basil or parsley for a burst of color and freshness, then serve warm or allow to cool for your healthy potato meal prep.
