  • 1 cup Grated Parmesan cheese Adds creaminess and richness.
  • 3/4 cup Provolone or mozzarella cheese Small cubes enhance texture.
  • 2 to 3 cups Fresh baby spinach Roughly chopped for freshness.
  • 1/2 cup Extra-virgin olive oil Base of the dressing for richness.
  • 1/4 cup Apple cider vinegar Balances flavors with acidity.
  • 2 Tbsp. Pepperoncini brine or fresh lemon juice Enhances the dressing's tanginess.
  • 3 Tbsp. Minced shallots Subtle onion flavor adds complexity.
  • 2 cloves Garlic, minced Essential for aromatic depth.
  • 2 tsp. Dried oregano A classic Italian herb flavor.
  • 2 tsp. Dried parsley For freshness in the dressing.
  • 3/4 tsp. Kosher salt Enhances all flavors in the salad.
  • 1/2 tsp. Black pepper Adds a touch of spice.

Method

  1. Begin by boiling a large pot of generously salted water and cook the fusilli pasta until al dente according to package instructions. Drain the pasta once cooked, then rinse it under cold water to stop the cooking process and set it aside.
  2. In a large measuring cup or bowl, combine olive oil, apple cider vinegar, pepperoncini brine (or lemon juice), minced shallots, garlic, dried oregano, dried parsley, kosher salt, and black pepper. Whisk these ingredients together until well blended and let them sit while you prepare the vegetables.
  3. In a large mixing bowl, add the drained pasta along with chickpeas, halved cherry tomatoes, sliced mini sweet peppers, chopped spinach, sliced pepperoncini peppers, halved kalamata olives, grated Parmesan cheese, and cubed provolone or mozzarella cheese.
  4. Pour the prepared dressing over the combined salad ingredients in the bowl and gently toss everything together until all ingredients are evenly coated with the dressing.
  5. For optimal flavor development, cover the salad and refrigerate it for at least 1 to 2 hours before serving to allow all those wonderful flavors to meld together beautifully.
