Ingredients

  • 2 eggs Essential binding agents for the cookie dough.
  • 1 cup peanut butter Provides rich flavor and creamy texture.
  • ⅓ cup pure maple syrup Adds natural sweetness without refined sugars.
  • 1 ½ cups rolled oats The heartiness that gives the cookies their chewiness.
  • ¼ tsp baking soda Helps cookies rise and become light.
  • ½ tsp ground cinnamon For a warm spice note enhancing flavor.
  • ½ tsp sea salt Balances sweetness, making flavors pop.
  • ⅔ cup chocolate chips The perfect melty addition to each bite.

Method

  1. Preheat the oven to 350 degrees Fahrenheit and line a large cookie sheet with parchment paper to prevent sticking.
  2. Whisk the eggs in a mixing bowl until they are well-beaten, then add in the peanut butter and pure maple syrup, stirring until everything is well-combined.
  3. Incorporate rolled oats, baking soda, ground cinnamon (if using), and sea salt into the wet mixture until a thick, sticky dough forms.
  4. Mix in chocolate chips thoroughly so that they are evenly distributed throughout your cookie dough.
  5. Drop mounds of dough onto the prepared baking sheet; you can choose to make giant cookies or smaller ones based on your preference.
  6. Bake for 9 to 12 minutes or until cookies appear set. Let them cool on the baking sheet for about 10 minutes before serving, allowing them to firm up slightly.
