Ingredients

  • 2-3 pounds chicken thighs or legs Trimmed of excess skin and fat (boneless and skinless, or bone-in and skin-on)
  • 3 cloves garlic Minced for a robust flavor
  • ¼ cup orange juice About 1 medium orange to add sweetness
  • 2 tablespoons achiote paste About 1.5 ounces for vibrant color and depth
  • 2 tablespoons olive oil Provides moisture and enhances browning
  • 1 tablespoon lime juice About ½ lime for a tangy kick
  • 1 tablespoon white grape juice vinegar For acidity that brightens the marinade
  • 1 tablespoon ground coriander Adds warm, earthy notes
  • 1 tablespoon kosher salt Essential for enhancing all the flavors
  • 2 teaspoons smoked paprika Infuses a smoky richness into the chicken
  • 2 teaspoons dried oregano Brings herbal notes to the dish
  • 1 teaspoon freshly ground black pepper For a subtle heat
  • 1 teaspoon ground cumin A classic spice in Mexican cuisine for warmth
  • ⅛ teaspoon ground cloves For a hint of sweetness and complexity
  • vegetable oil For greasing the grill and preventing sticking

Method

  1. Prepare the Marinade: Add all ingredients except the chicken in a small bowl and whisk them together until well combined.
  2. Marinate the Chicken: Place the chicken in a large ziploc bag or baking dish, pour in the marinade, close the bag tightly, and massage it to coat thoroughly before refrigerating it for 2 to 6 hours.
  3. Preheat the Grill: Preheat your grill to high heat for direct cooking and grease the grates with vegetable oil using a paper towel soaked in oil.
  4. Grill the Chicken: Remove the chicken from the marinade and let any excess liquid drip off before placing it skin side down on the grill over direct heat.
  5. Cook Thoroughly: Grill each side of the chicken for about 5-7 minutes with the lid closed until crispy and golden brown while ensuring it reaches an internal temperature of 165°F.
  6. Serve with Accompaniments: Serve your delicious pollo asado alongside warm corn or flour tortillas and some flavorful Mexican rice for a complete meal experience.
