Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped
  • 2 large oranges zest and juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste pepper
  • 1 small onion quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Method

  1. Preheat your oven to 375°F (190°C). Rinse the chicken under cold water and pat it dry with paper towels.
  2. In a bowl, combine olive oil, minced garlic, chopped thyme, chopped rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper. Whisk until well incorporated.
  3. Rub the seasoning mixture generously all over the chicken, ensuring you get under the skin for maximum flavor infusion. Place quartered onions inside the cavity of the chicken.
  4. Place the seasoned chicken in a roasting pan breast-side up and pour in the chicken broth around it. Roast in your preheated oven for about one hour or until juices run clear when pierced at the thigh.
  5. Once cooked through, remove the chicken from the oven and let it rest for about ten minutes before carving.
