  • ¼ cup creamy peanut butter Use ½ cup for more peanut flavor.
  • 2 tablespoons soy sauce Adds savory depth to the sauce.
  • 1 tablespoon rice apple vinegar Gives a hint of acidity to balance flavors.
  • 2 tablespoons chili-garlic sauce For a spicy kick (or use sriracha).
  • 1 tablespoon sesame oil Enhances the nutty flavor profile.
  • 1 tablespoon honey Adds sweetness to the sauce.
  • 1 teaspoon lime juice Brightens up the overall taste.
  • 1 teaspoon garlic powder Or use 1 clove garlic, finely minced or grated for more freshness.
  • 1 teaspoon ginger powder Or use 1 teaspoon fresh grated ginger for added zing.
  • 1 tablespoon water or stock Add more as needed for thinning the sauce.
  • 8 ounces noodles Choose from rice, flour, egg, ramen noodles, or udon noodles based on preference.
  • 1-2 tablespoons sesame oil Use for tossing the noodles before serving.
  • Garnish Crushed red pepper flakes, fresh chopped green onion, crumbled roasted peanuts or sesame seeds enhance presentation and flavor.

Method

  1. In a mixing bowl, combine the creamy peanut butter, soy sauce, rice apple vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic powder (or minced garlic), ginger powder (or grated ginger), and water or stock. Whisk together until smooth and well combined; adjust consistency as needed by adding more water or stock.
  2. Bring a pot of salted water to a boil and cook your chosen noodles according to package instructions until al dente. Drain the noodles and rinse them under cold water briefly to stop cooking and help prevent sticking.
  3. In a large mixing bowl or skillet over medium heat, add the cooked noodles along with the prepared peanut sauce. Toss gently but thoroughly until every strand of noodle is coated in that luscious peanut goodness.
  4. Drizzle in 1-2 tablespoons of sesame oil while tossing the noodles again for an extra layer of flavor. Adjust seasoning if necessary by adding additional soy sauce or lime juice according to your taste preferences.
  5. Plate your Thai Peanut Noodles and garnish with crushed red pepper flakes for heat, fresh chopped green onions for crunch, and crumbled roasted peanuts or sesame seeds for added texture and elegance.
