  • 2 pounds minced beef Provides a hearty protein base for the dish.
  • 24 ounces tomato-based pasta sauce Adds rich flavor and moisture between layers.
  • 15 ounces ricotta cheese Contributes creaminess and texture to the filling.
  • 1 cup parmesan reggiano, shredded Enhances flavor with its nutty tones.
  • 1.5 cups mozzarella cheese Melts beautifully on top for a gooey finish.
  • 1 large egg Binds the ricotta mixture together perfectly.
  • to taste salt Essential for seasoning your dish just right.
  • to taste pepper Essential for seasoning your dish just right.
  • small handful fresh parsley and basil, chopped Fresh herbs elevate the overall flavor profile.

Method

  1. Prepare the Zucchini Noodles: Wash and slice the zucchinis lengthwise into thin strips. Lay them out on paper towels, sprinkling lightly with salt to draw out excess moisture. Let them sit for about 15 minutes while you prepare the filling.
  2. Cook the Minced Beef: In a large skillet over medium heat, add the minced beef, breaking it apart as it cooks. Stir occasionally until browned and fully cooked through, about 8-10 minutes. Drain any excess fat before adding the tomato-based pasta sauce; simmer for an additional 5 minutes.
  3. Mix the Cheese Filling: In a mixing bowl, combine ricotta cheese, shredded parmesan reggiano, egg, salt, pepper, and half of the chopped parsley and basil. Stir until well combined and creamy; set aside as you assemble your lasagna.
  4. Assemble the Lasagna: Preheat your oven to 375°F (190°C). Spread a layer of meat sauce at the bottom of a baking dish, followed by alternating layers of zucchini noodles, cheese filling, and more meat sauce. Repeat until all ingredients are used up, finishing with a layer of zucchini topped with mozzarella cheese.
  5. Bake to Perfection: Cover the baking dish loosely with aluminum foil to prevent excessive browning. Bake for approximately 25 minutes; then remove the foil and continue baking for another 15 minutes until bubbly and golden on top.
  6. Let it Rest Before Serving: Once removed from the oven, allow the lasagna to rest for about 10 minutes before slicing into squares.
